The ESP8266 specs are on the Espressif website. As for the motor, Google โ€œdc 3v n20 micro speed gear motor stall current ratingโ€. The no-load current may be within spec but the stall current (max load current) may be your issue. A simple motor driver circuit can be made with only 3 or 4 components if it becomes an issue.

I think a 500mA VReg will be OK if all you are powering is the Wemos D1 Mini and no other accessories. But to reduce the chance of power brownouts during random peak currents, I suggest adding a 330uF to 470uF 10V low ESR electrolytic directly on the D1 mini's 5V power pin. Short leads to 5V and Gnd (installed on D1 Mini not the PSU).

Let's look at the IRLZ44N, the threshold voltage is 1-2V, so it will turn on with 3.3V. The value of R DS on was your concern, we have this as given for V GS =4V, R DS = 0.035โ„ฆ, sinking 21A. So, if you want to use a Wemos D1 Mini with these led strands just make sure that you ignore the arrows and wiring common sense and send your signals into socket end of the strand. The really good news is that you can probably connect the Wemos directly to the led strand. My leds work without my carefully assembled level converter.

A delay() puts the WiFi of the WeMos AFAIK to sleep for some random time (about a second and a bit IIRC). So use millis() to manage time between analogReads, not delay(). Can also use a single resistor (not a voltage divider) between sensor output and analogue input, because the WeMos D1 mini already has a voltage divider buildin.
The 5 V capacitor will suppress interference from the PWM affecting the LED commands, The regulator will generally be able to manage the bursts of RF transmission.
